Fig & Honey Ice Cream

Ice cream is an all time favorite frozen dessert. There are plenty of branded and commercial ice creams available in every part of the world but homemade ice cream is still very special. All the old recipes contained eggs to give a smooth rich texture to the ice cream but this one is special and without eggs.  Valli Muthiah , a very special friend gave me this easy recipe nearly 40 years ago. It is delicious, decadent,  smooth and so full of flavor.

Ingredients

  1. Soak and stew the figs in 2 cups water until they are soft and there is minimum water left. Cool.
  2. Puree the figs until smooth.
  3. Heat the milk with 2 tablespoons sugar, keeping aside 50 ml cold milk to mix with the custard powder.
  4. When the milk is boiling, add the paste of cold milk and custard powder. Switch off the heat when the custard thickens. Cool.
  5. When both the fig puree and the custard are cool, add condensed milk, honey and cream and mix well either in a blender or with an electric mixer.
  6. Pour into a container and freeze overnight.
