Arugula, Capers & Tomato Salad
Arugula is very low-calorie – 100 g of fresh leaves hold just 25 calories. Nonetheless, it has many vital phytochemicals, anti-oxidants, vitamins, and minerals that immensely benefit health. This peppery leaf is also known as Salad Rocket. It combines well with other vegetables like cherry tomatoes to give a delicious salad with capers and pine nuts.You can use walnuts or pecans if you prefer.
Ingredients
- 1 bunch arugula
- 1 cup cherry tomatoes
- 2 tbsp capers
- 2 tbsp pine nuts
- 12 pitted olives
- 2 tbsp olive oil
- 2 tbsp wine vinegar
- a pinch salt
- 1 tsp sugar

Instructions
- Wash and dry the arugula leaves. Break the larger leaves into smaller pieces.
- Slice the tomatoes and olives into two halves.
- Mix the dressing of olive oil, wine vinegar, salt and sugar.
- Place the arugula, cherry tomatoes, and olives in a bowl.
- Add the dressing and toss well. Sprinkle the capers and pine nuts and keep aside for a few minutes for the flavors to develop.
- Serve chilled.
