  1. Wash and dry the arugula leaves. Break the larger leaves into smaller pieces.
  2. Slice the tomatoes and olives into two halves.
  3. Mix the dressing of olive oil, wine vinegar, salt and sugar.
  4. Place the arugula, cherry tomatoes, and olives in a bowl.
  5. Add the dressing and toss well. Sprinkle the capers and pine nuts and keep aside for a few minutes for the flavors to develop.
  6. Serve chilled.
