Broccoli is a green cauliflower/ cabbage like vegetable. It resembles cauliflower with a large flower head and is rich in vitamins if cooked only briefly. This is a thick, creamy, colourful soup and very easy and quick to make. Always use very fresh and green broccoli and drizzle with truffle oil for a huge extra impact on flavour. The truffle oil drizzle is optional.

Instructions
  1. Wash and clean broccoli. Separate into florets together with stalk. You should get about 2 cups of florets.
  2. Blanch briefly in salted water to clean and remove any dirt and damaged pieces.
  3. Heat 2 teaspoons butter and 1 teaspoon oil and sauté the broccoli briefly.
  4. Add 500 ml water and bring to boiling point. Switch off the heat. Cover and cool.
  5. Puree using an electric liquidiser until smooth.
  6. Heat and serve in individual soup bowls. Drizzle with a teaspoon of truffle oil (optional) for extra flavour.
