Ingredients

red apple

green capsicum (pepper)

black olives

fresh rosemary
Dressing

virgin olive oil

tbsp
fresh lemon juice

sugar

tsp
salt
Instructions
Cut the apple into quarters and slice thin with the skin. Sprinkle with a little lemon juice and half the sugar
Slice the tomatoes into semi circles
Cut the capsicum into half. Discard the seeds and slice lengthwise into thin strips
Slice the pitted olives into rounds
Arrange the tomato slices in a large circle. Mix the other ingredients ( other than the dressing)and place within the circle of tomatoes
Sprinkle the dressing over the salad and let stand for at least 15 minutes for the rosemary flavor to develop
