Apple Walnut Loaf

This is a delicious tea cake and can also be served for dessert with a dollop of ice cream since it does not have any icing. There are many variations but I prefer to make my loaf with raisins and walnuts.

Instructions
  1. Sift the dry ingredients flour, baking soda, salt twice. Add the cinnamon powder and freshly grated nutmeg
  2. Place sugars, flour mixture, eggs, vanilla extract and oil in a bowl and beat for 2 minutes until smooth and creamy
  3. Fold in diced apple, raisins, chopped walnuts
  4. Pour into a greased ,floured loaf tin and bake for one hour or until done in a moderately hot oven
  5. Cool for a while and turn out on to a serving tray
