Apple Walnut Loaf
This is a delicious tea cake and can also be served for dessert with a dollop of ice cream since it does not have any icing. There are many variations but I prefer to make my loaf with raisins and walnuts.
Ingredients
- 1 1/2 cup flour (maida or a mix of maida and wholewheat flour)
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cup castor sugar
- 1/4 cup brown sugar
- 3/4 cup vegetable oil
- 1 tsp cinnamon powder
- 1/4 tsp nutmeg powder
- 2 tsp vanilla extract
- 1 1/2 cup diced peeled apple
- 1/4 cup raisins
- 1/3 cup walnuts
- 2 eggs

- Sift the dry ingredients flour, baking soda, salt twice. Add the cinnamon powder and freshly grated nutmeg
- Place sugars, flour mixture, eggs, vanilla extract and oil in a bowl and beat for 2 minutes until smooth and creamy
- Fold in diced apple, raisins, chopped walnuts
- Pour into a greased ,floured loaf tin and bake for one hour or until done in a moderately hot oven
- Cool for a while and turn out on to a serving tray
