Ingredients

or 8 cups of baby arugula leaves

fresh orange juice

pecans or walnut halves
Instructions
Wash and dry the arugula leaves.
Mix the orange juice, lemon juice, mustard, salt and olive oil to make a dressing.
Cut the apples into thin slices.
Sprinkle the apples with a bit of lemon juice to keep them from darkening.
Place the arugula and apple slices in a bowl.
Pour the dressing over and toss to coat. Arrange in a salad platter.
Sprinkle the pecans or walnut halves and serve.
