Asparagus as a vegetable is the tender stem (young shoots) of a perennial flowering plant. This is a delicacy but a simple salad which has a number of potential health benefits. It is an excellent source of vitamin K , A , C and folate, riboflavin and thiamin. I have used lettuce which is is frilly and has curly green leaves and tiny cherry tomatoes for this simple, easy salad.

Instructions
  1. Wash and dry the lettuce after tearing into bite size pieces. Arrange on your platter.
  2. Blanch and trim the asparagus shoots. Use salt water for blanching.
  3. Wash and dry the cherry tomatoes.
  4. Mix the remaining ingredients for the dressing.
  5. Arrange the asparagus over the lettuce and sprinkle with the lemon juice dressing.
  6. Toss the tomatoes with a little of the dressing and place over the blanched asparagus and lettuce.
  7. If there is any dressing left, sprinkle over the entire salad and serve.
