Avocado, Mustard Greens Salad

This avocado salad has a spicy tang because of the flavor of the mustard greens. When the mustard micro greens grow for a bit longer, you get mustard leaves which can be used instead of basil or lettuce with avocado chunks, tomatoes, olives and slices of lime.

Instructions
  1. Wash and dry the mustard greens.
  2. Peel and stone the avocado and cut into 1 inch chunks
  3. Cut the tomato into chunks.
  4. Using a sharp knife cut the small lemon into thin slices.
  5. Mix the remaining ingredients for the dressing.
  6. Arrange the sliced avocado over the mustard greens and sprinkle with the lemon juice dressing.
  7. Toss the tomatoes with a little of the dressing and place over the sliced avocado and lettuce.
  8. Arrange the pitted olives and sliced lemon
  9. If there is any dressing left, serve on the side with the salad.
