Char grill the red bell peppers by roasting on the fire or cutting them into halves and roasting in a hot oven until the outer skin is charred and black.
Place in a bowl and cover with plastic wrap until cool. Peel, de seed and wash. Slice into slivers.
Crush the garlic. Mix with olive oil, wine vinegar, dried herbs and seasonings to make a dressing.
Toss the sliced peppers in the dressing and chill for at least 4 hours.
Cook the pasta in furiously boiling water and drain when done. Cool.
Add to the marinated peppers and sprinkle with the olives.
