Breadfruit Fritters

Breadfruit has a fragrance that is reminiscent of fresh baked bread when roasted or baked. It is a resistant starch and has a low glycemic index and allows for better control of diabetes. Breadfruit seeds and fruit are eaten as food. The roots, leaves and latex of the breadfruit tree are used for medicinal purpose to treat arthritis, asthma , backpain, wound healing etc. It is not available as freely as Jackfruit but is very popular in Mangalore and West Pacific islands. It is a medium size fruit with a slightly prickly green outer skin which needs to be discarded. It is a smaller version of a jackfruit. The entire fruit/ vegetable can be used after peeling. In this recipe, we cut the breadfruit into thin ¼ cm wedges and bake it in the oven. It can also be fried in oil if an oven is not available. We get our breadfruit from a huge tree at our friends’ Valli & Muthiah’s house. Valli used to serve these fritters as a starter/snack for many years.

Instructions
Peel the breadfruit with an oiled knife.
Cut the breadfruit into half and cut into ½ cm thick wedges. The smaller pieces can remain as halves.
