Capers are the unripened green buds of a bush that grows wild in the Mediterranean and certain parts of Asia. Since they are not cultivated all over the world, they are pickled in brine and available in most gourmet stores. Ice burg lettuce and oranges with a delicious orange and olive oil dressing are used in this unusual salad.

Instructions
  1. Wash and dry the ice burg lettuce. Tear into bite size pieces.
  2. Grate 1 tablespoon of orange rind and juice one orange to get 2 tablespoons of orange juice. Peel the remaining 3 oranges to get segments with only the fruit.
  3. Mix the orange rind and juice, lemon juice, honey mustard, salt and olive oil to make a dressing.
  4. Place the ice burg lettuce and orange segments in a bowl.
  5. Pour the dressing over and toss to coat. Arrange in a salad platter.
  6. Sprinkle the capers and serve.
