  1. Peel the dragon fruit and cut into large wedges. Taste and drench with lemon juice and sugar if required.
  2. Peel and cut the avocado into medium chunks. Sprinkle lemon juice over them to prevent browning.
  3. Make a dressing with lemon juice, honey and salt.
  4. Toss the dragon fruit & avocado with the dressing in a serving bowl.
  5. Cut the pitted olives in two and sprinkle over the salad.
  6. Garnish with mint leaves.
  7. Chill & serve.
