Farfalle with Fresh Basil
This is a very simple but delicious Pasta main course and has Aglio E Olio as a base recipe. The Farfalle (literally butterflies- bow shaped pasta) can be replaced with any pasta that is readily available, spaghetti, penne, fettucine etc. I have used parmesan cheese but any finely grated hard cheese can be substituted.

Instructions
  1. Boil water with 1 tablespoon of salt and a few drops of oil in a large vessel. When water is boiling furiously, add farfalle and cook till done.
  2. Strain and put into a bowl.
  3. Chop garlic and sauté in 1 tablespoon oil until the aromatic aroma of the garlic is released. Add the cooked farfalle and season with salt
  4. Sprinkle half the Basil leaves and parmesan cheese. Mix and switch off the heat.
  5. Serve hot in a platter with the rest of the basil on top and the remaining olive oil drizzled over it.
  6. Serve with chilli flakes (optional) and extra cheese
