Fig & Lettuce Salad

This delicious salad is made with figs, cherry tomatoes and cucumber. I have used a mixture of Butterhead and Lollo Rosso lettuce. Butterhead is also known as cabbage lettuce and is usually deep green. Lollo Rosso has tight curly leaves and is also known as red coral lettuce. The contrast in colour and texture make a pretty background for the figs.

  1. Cut the figs into wedges after washing and drying.
  2. Cut the cucumbers into semicircles and slice the cherry tomatoes into halves.
  3. Wash, dry and tear the lettuce into bite size pieces. Place in the platter or serving bowl.
  4. Mix 2 tablespoons honey, lemon juice, olive oil, mustard and salt to make a dressing. Reserve the remaining 1 tablespoon honey to sprinkle over the figs.
  5. Sprinkle half the dressing on the cut figs, tomatoes and cucumber and toss together. Chill until required.
  6. Toss the salad leaves with the remaining dressing and arrange the figs, tomatoes and cucumber pieces over it.
  7. Sprinkle the remaining honey over the figs and serve.
