Fresh Oregano & Feta Salad
This is a delicious juicy colorful salad made with cherry tomatoes and fresh oregano instead dried oregano. The crumbled Feta cheese is tangy, salty and contrasts well with the juicy tomatoes. The addition of sliced cucumber gives it a crunch. The fresh tiny oregano leaves give a herby touch to the salad.

  1. Wash and dry the cherry tomatoes. Slice into halves.
  2. Cut the cucumber lengthwise and then into half roundels.
  3. Mix the freshly squeezed lime juice with a little salt, castor sugar & mustard for the dressing.
  4. Sprinkle the cut cherry tomatoes and cucumber with the lemon juice dressing.
  5. Toss the tomatoes and cucumber. Place in the serving bowl/platter.
  6. Sprinkle oregano leaves and crumbled Feta over the tomatoes.
  7. Drizzle honey over the salad.
  8. If there is any dressing left, sprinkle over the entire salad and serve.
