The washed and drained mutton chops can be added and cooked without water in the onion , ginger garlic base for 3 minutes.
Add 500ml water, chilli, powder, coriander powder, turmeric powder and salt. Cook until chops are tender. If there is too much water, reduce until the gravy is thick.
Roughly chop the fresh coriander leaves and grind with pepper and garlic into a paste.
Heat the remaining oil and add the ground coriander paste. Add the cooked mutton chops with the gravy and cook for just a minute or two before turning off the heat. The raw taste of garlic should disappear but the freshness of the coriander leaves should remain.
