Humus
Humus or Houmos Bi Tahini as it is known in Lebanon, is a very popular appetiser or meze and is easy to prepare. A platter /bowl of Hummus and Pita bread cut into wedges is the way serve it. Other kinds of bread can also be used.
Ingredients
- 1 cup (240 ml) dried chickpeas
- 20 g peeled garlic
- 20 g white sesame seeds or 2 tablespoons Tahini paste
- 1 large size lemon
- 1 tsp salt
- 1 tbsp sesame or any vegetable oil
- 3 tbsp olive oil
- 1/4 tsp chilli flakes (optional)
- few sliced olives for garnishing

Instructions
- Soak chickpeas overnight and cook in a pressure cooker until soft. You can use canned cooked chickpeas instead.
- Drain and reserve the liquid.
- Extract 2 tablespoons juice from the lemon.
- Puree the soft cooked chickpeas with lemon juice , peeled garlic, sesame seeds or tahini paste, olive oil and salt until smooth. Add enough of the drained water to get a thick paste which will be easy to spread.
- Transfer to serving bowls and garnish with olive oil, a sprinkling of chilli flakes (optional), and some sliced olives.
- Serve with pita bread.
