Instructions
Peel the mango. Cut the cheeks of the mango and slice into crescent shapes.
Wash and dry the rocket leaves. Tear into bite size pieces and place on the salad bowl.
Arrange the mango slices, cherry tomatoes and halved olives on the rocket leaves.
Shake the ingredients for the salad dressing in a small jar and pour over.
Let the salad rest for 15 minutes to let the dressing coat the rocket and mango slices.
