Masala Chicken
There are hundreds of different Indian recipes for chicken made with imaginative use of spices and masalas.The chicken is cooked with onions, tomatoes, herbs and spices or even combined with vegetables. This is a very simple version but very tasty. It can be eaten with roti/flatbread or rice. The chilli powder can be reduced or avoided if you want a mild masala.
Ingredients
- 1 kg dressed chicken skinned and cut into medium size pieces
- 200 g onions
- 150 g tomatoes
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tbsp chilli powder
- 1 tsp pepper powder
- salt to taste
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 4 pods cardamom
- 4 cloves
- 1 inch stick cinnamon
- 1 tbsp fresh lemon juice
- 1 sprig green coriander/ cilantro
- 2 tbsp vegetable oil

Instructions
- Clean and drain the chicken pieces. Marinate for 10 minutes in turmeric and salt.
- Heat oil. Add whole spices – cardamom, cloves, cinnamon and heat for a few seconds until aromas are released.
- Chop the onions and tomatoes. Add the onions and sauté for a minute or until they are light brown. Add the ginger garlic pastes and sauté for another minute. Add the tomatoes and sauté for another 2 minutes.
- Once the tomatoes and masala is ready, add the marinated chicken and sauté for 5 minutes without water.
- Add half a cup water, chilli powder, coriander powder, pepper powder and salt to taste.
- Cook on medium heat until chicken is done and the masala is a thick gravy.
- Sprinkle with chopped green coriander and serve.
