Instructions
  1. Wash and dry the iceberg lettuce. Tear into small pieces and place in a bowl.
  2. Cut the cucumber into half lengthwise and then into half circles. Slice the cherry tomatoes into two halves.
  3. Peel and chop the apple into 1 inch cubes.
  4. Wash and dry the micro greens.
  5. Extract 1 tablespoon of lemon juice.
  6. Place the oil, lemon juice, sugar, salt, mustard in a bowl and combine well to make a dressing.
  7. Place all the prepared vegetables and fruit in the bowl with the lettuce and toss with the dressing.
  8. Sprinkle the micro greens over the salad and chill for an hour or until required.
