  1. Char grill the aubergines either in the oven or on top of the stove until soft. Peel and mash.
  2. Peel and mash the garlic with a little salt.
  3. Extract 60 ml juice from the lemon.
  4. Put aubergine, garlic, sesame/vegetable oil, lemon juice and salt to taste in a food processor and pulse until smooth.
  5. Pour into a shallow serving bowl. Sprinkle a tablespoon of olive oil on top.
  6. Garnish with pomegranate seeds, chopped parsley and chilli flakes (optional).
