Ingredients

oval black aubergines or eggplants

sesame or any vegetable oil

pomegranate seeds

Instructions
Char grill the aubergines either in the oven or on top of the stove until soft. Peel and mash.
Peel and mash the garlic with a little salt.
Extract 60 ml juice from the lemon.
Put aubergine, garlic, sesame/vegetable oil, lemon juice and salt to taste in a food processor and pulse until smooth.
Pour into a shallow serving bowl. Sprinkle a tablespoon of olive oil on top.
Garnish with pomegranate seeds, chopped parsley and chilli flakes (optional).
