Pomegranate, Pista & Pear Salad
Ingredients

lollo rossa lettuce

ripe pear

pomegranate seeds
1/2
cup
shelled green pistachios

tbsp
wine vinegar

tbsp
olive oil

tsp
salt

tsp
castor sugar
1
tsp
lemon juice
1
tsp
mustard
Instructions
Wash and dry the lettuce. Tear into small bite size pieces.
Slice the pear with the skin. Drizzle the lemon juice and castor sugar and set aside. The lemon juice prevents the sliced pear from browning.
Prepare the dressing of wine vinegar, olive oil, salt and mustard.
Place the lettuce, half the sliced pear, half the pomegranate, half the pistachios in a bowl.
Pour the dressing over and toss. Chill for 15 minutes.
Sprinkle the remaining pear, pomegranate and pistachios over the salad and serve chilled.
