  1. Chop the onion and tomatoes separately into tiny pieces after blanching the tomatoes and removing the skin.
  2. Heat oil and add crushed garlic. Sauté for a minute and add onions and cook until soft. Add tomatoes, sugar, salt, pepper and chilli flakes and continue cooking for a few minutes. Switch off heat after 2 minutes. Add chopped fresh basil after reserving a little for garnishing.
  3. Add the salami to the sauce and let it absorb the flavours.
  4. Boil water with 1 tablespoon of salt and a few drops of oil in a large vessel. Add Pasta and cook till done. Drain.
  5. Mix cooked pasta with the seasoned tomato, basil sauce and salami.
  6. Garnish with a few fresh basil leaves.
  7. Serve with a generous sprinkling of grated cheese.
