Salami Pasta
Ingredients
- 400 g Spirali Farfalle or Penne Pasta
- 200 g Salami
- 100 g onion
- 500 g tomatoes
- 120 ml olive oil
- 1 tsp sugar
- 4 cloves garlic
- 1/2 cup fresh basil leaves
- salt to taste
- 2 tbsp chilli flakes
- 80 g grated parmesan or pecorino cheese

Instructions
- Chop the onion and tomatoes separately into tiny pieces after blanching the tomatoes and removing the skin.
- Heat oil and add crushed garlic. Sauté for a minute and add onions and cook until soft. Add tomatoes, sugar, salt, pepper and chilli flakes and continue cooking for a few minutes. Switch off heat after 2 minutes. Add chopped fresh basil after reserving a little for garnishing.
- Add the salami to the sauce and let it absorb the flavours.
- Boil water with 1 tablespoon of salt and a few drops of oil in a large vessel. Add Pasta and cook till done. Drain.
- Mix cooked pasta with the seasoned tomato, basil sauce and salami.
- Garnish with a few fresh basil leaves.
- Serve with a generous sprinkling of grated cheese.
