Shepherd’s Pie

Shepherd’s Pie is an English dish, traditionally made with beef or lamb/mutton.  It is essentially a casserole with cooked meat and vegetables, topped with mashed potatoes, and baked. Some versions do not include vegetables. The ground meat is cooked with onions, ginger and garlic and fresh herbs in my version to make the pie more aromatic. The original English recipe is often made without these additions but the flavor is much better this way.

Instructions
  1. Boil potatoes in a pressure cooker until soft.
  2. Chop the onions and sauté in oil until soft. Add ginger garlic paste and sauté for another 5 minutes.
  3. Add the ground meat and continue to cook over low heat until meat is brown. Add vegetables, water, salt, pepper and chilli powder if used and cook until done and fairly dry. Add chopped fresh herbs just before turning off the heat.
  4. Peel and mash boiled potatoes with milk, salt, grated cheese and half the butter.
  5. Spread the cooked meat evenly in a baking dish. Top with mashed potatoes, spreading evenly to cover filling completely.
  6. Make swirl patterns on surface of potatoes with a fork and dot with the remaining butter.
  7. Bake for about 30 minutes until the potato topping is golden and filling is hot.
