Spaghetti with Truffle oil

Truffle oil is top quality olive oil that has been infused with either white or black truffles. It adds a depth of flavor that is amazing to Pasta, Pizza, Soups and lots of other innovative creations. Whenever Parmesan cheese is available, I like to used grated Parmesan but any other hard cheese can be used.

Instructions
  1. Heat oil and add finely chopped garlic, sliced mushrooms, salt and seasoning.
  2. Wash and blanch spinach. Squeeze and remove excess water. Chop and add to garlic and mushroom. Saute’ for a minute.
  3. Dissolve corn flour in cold milk and add to sautéd garlic mushroom and spinach.
  4. Add grated cheese and cook for a minute until cheese melts into the sauce. Reserve a little grated Parmesan or any other cheese for sprinkling on top.
  5. Boil water with 1 tablespoon of salt and a few drops of oil in a large vessel. Add spaghetti and cook till done. Drain.
  6. Mix the drained spaghetti with the cheese sauce.
  7. Transfer to a serving dish and sprinkle with parmesan cheese.
  8. Drizzle the truffle oil just before serving. This will add a lovely depth to the flavor.
