Spinach Soup
This is a tasty, healthy and colourful soup. The combination of spinach and potato gives body to the soup and it has a lot of flavour. It is delicious served by itself or with crusty bread and fresh butter. I have used cinnamon and clove powder but nutmeg will also enhance the taste if preferred.
Ingredients
- 1 medium bunch spinach (approx 250 grams)
- 1 small potato (approx 100 grams)
- 1 small onion (60 grams)
- salt and pepper to taste
- pinch cinnamon and clove powder
- 1 tbsp oil

Instructions
- Wash and clean spinach. Chop into large pieces together with stalk. Peel and cut the potato and onion into medium size pieces.
- Heat oil. Saute onion with ½ teaspoon salt.
- Add the potatoes with 500 ml water and boil for 10 minutes or until soft.
- Once the potatoes are cooked, add the chopped spinach and cook for one minute. By cooking the spinach only briefly, the bright green colour is retained.
- Strain the cooked vegetables. Preserve liquid. Puree vegetables until smooth in the blender.
- Add strained liquid, spice powder, salt and pepper to the pureed vegetables and bring to boil.
- Adjust seasoning. Serve hot.
