Dragon Fruit & Avocado Salad
Dragon Fruit is indigenous to Central & South America. Avocado is also from Mexico but both are cultivated all over the world now. The combination gives you a vibrant salad with sweet buttery notes.. A handful of black olives gives a salty tang.
Ingredients
- 1 large dragon fruit
- 1 large avocado
- few sprigs mint
- handful black pitted olives
- 2 lemons
- 2 tbsp honey
- salt to taste
- castor sugar (if the dragon fruit is not sweet)
- 1 sprig mint for garnish

Instructions
- Peel the dragon fruit and cut into large wedges. Taste and drench with lemon juice and sugar if required.
- Peel and cut the avocado into medium chunks. Sprinkle lemon juice over them to prevent browning.
- Make a dressing with lemon juice, honey and salt.
- Toss the dragon fruit & avocado with the dressing in a serving bowl.
- Cut the pitted olives in two and sprinkle over the salad.
- Garnish with mint leaves.
- Chill & serve.
