Spice Fruit Cake

This is a recipe I have created using a recipe from Vienna several years ago and is delicious as a tea cake. The hint of spice powder and the texture of this cake makes it festive but at the same time light enough to serve at anytime with a cup of tea or coffee. I have used a mixture of cinnamon, cloves and nutmeg for the spice powder but it can be replaced with any similar spice or spices of your choice.

Instructions
  1. Sieve the flour with 1 teaspoon baking powder. Transfer to a large bowl.
  2. Add castor sugar, eggs, soft butter and spice powder. Beat well for 5 minutes.
  3. Chop candied fruits and dates, dust with a little flour and fold into cake mixture.
  4. Transfer to a lined, greased and floured tin.
  5. Bake in a moderate oven for about 45 minutes or until done.
  6. Cool for at least 30 minutes and remove from cake tin.
Recipe Notes

If candied fruits are not available, raisins can be substituted together with seedless dates.
