Spice Fruit Cake
This is a recipe I have created using a recipe from Vienna several years ago and is delicious as a tea cake. The hint of spice powder and the texture of this cake makes it festive but at the same time light enough to serve at anytime with a cup of tea or coffee. I have used a mixture of cinnamon, cloves and nutmeg for the spice powder but it can be replaced with any similar spice or spices of your choice.
Ingredients
- 200 g flour
- 150 g castor sugar
- 165 g butter or magarine
- 100 g candied fruit and seedless dates
- 3 eggs
- 1 tsp baking powder
- 1 tsp spice powder
- 50 g walnuts (optional)

Instructions
- Sieve the flour with 1 teaspoon baking powder. Transfer to a large bowl.
- Add castor sugar, eggs, soft butter and spice powder. Beat well for 5 minutes.
- Chop candied fruits and dates, dust with a little flour and fold into cake mixture.
- Transfer to a lined, greased and floured tin.
- Bake in a moderate oven for about 45 minutes or until done.
- Cool for at least 30 minutes and remove from cake tin.
Recipe Notes
If candied fruits are not available, raisins can be substituted together with seedless dates.
