Green Pea Soup

This is a delicious soup and can be made either with fresh or frozen peas through the year. It is popular all over the world and is considered a classic. If you are not calorie conscious, you can use rich creamy milk instead of extra water after you puree the cooked vegetables. The initial stock obtained while cooking the peas is also used for the soup.

Instructions
  1. Peel and chop onion
  2. Heat the oil in a pan. Add the chopped onions. Add the butter for extra flavor and sauté with a pinch of salt until soft
  3. Add peas. Cook until soft with 2 cups water. Cool. Reserve 1 Tablespoon cooked peas for garnishing
  4. Strain the cooked peas and onion and reserve the liquid
  5. Puree the cooked vegetables
  6. Add enough liquid to make it 1 litre (1000 ml) and add pureed peas
  7. Add salt to taste and bring to a boil
  8. Serve plain or with croutons after garnishing with the reserved peas
