Apple Rosemary Salad
Simple ingredients put together with an eye for color and a dressing to enhance their natural flavors can be a wonderful combination. Sliced fruit, a sprinkling of fresh herbs and olives make a delightful start to a meal.
Ingredients
- 1 small red apple
- 3 medium tomatoes
- 1 small green capsicum (pepper)
- 10 pitted black olives
- 1 sprig fresh rosemary
Dressing
- 1 tbsp virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp sugar
- 1/2 tsp salt

Instructions
- Cut the apple into quarters and slice thin with the skin. Sprinkle with a little lemon juice and half the sugar
- Slice the tomatoes into semi circles
- Cut the capsicum into half. Discard the seeds and slice lengthwise into thin strips
- Slice the pitted olives into rounds
- Arrange the tomato slices in a large circle. Mix the other ingredients ( other than the dressing)and place within the circle of tomatoes
- Sprinkle the dressing over the salad and let stand for at least 15 minutes for the rosemary flavor to develop
