Bocconchini Tomato Salad
This recipe is with bite sized bocconcini and cherry tomatoes. Fresh basil leaves are used with a simple vinaigrette dressing. Bocconchini is mozzarella cheese in a small ball shape and can vary in size.
Ingredients
- 1 cup cherry tomatoes
- 1 cup bite sized bocconcini cheese
- handful fresh basil leaves
- 2 tbsp wine vinegar
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp sugar
- pinch pepper

Instructions
- Mix salt, sugar, pepper and vinegar until salt and sugar have dissolved.
- Add the oil while beating briskly or shake vigorously in a small bottle after adding the oil.
- Slice the cherry tomatoes into halves if large enough.
- Pull some of the bocconcini cheese apart and leave some whole.
- Place in a salad bowl/plate and sprinkle basil leaves.
- Drizzle the dressing over and serve.
