Apple Rosemary Salad

Simple ingredients put together with an eye for color and a dressing to enhance their natural flavors can be a wonderful combination. Sliced fruit, a sprinkling of fresh herbs and olives make a delightful start to a meal.

Instructions
  1. Cut the apple into quarters and slice thin with the skin. Sprinkle with a little lemon juice and half the sugar
  2. Slice the tomatoes into semi circles
  3. Cut the capsicum into half. Discard the seeds and slice lengthwise into thin strips
  4. Slice the pitted olives into rounds
  5. Arrange the tomato slices in a large circle. Mix the other ingredients ( other than the dressing)and place within the circle of tomatoes
  6. Sprinkle the dressing over the salad and let stand for at least 15 minutes for the rosemary flavor to develop
