Arugula & Apple Salad
Arugula and apple salads are very popular. The dressing is often made with a mixture of orange and lemon juice, olive oil with mustard/pepper and salt. The combination of fruit and the slight peppery bitterness of the baby arugula leaves together with a sweet and salty dressing make a great start to a meal. Health conscious people who are counting their calories could also make this their main course.
Ingredients
- 2 large bunches or 8 cups of baby arugula leaves
- 2 crisp apples
- 1/2 cup fresh orange juice
- 2 tsp lemon juice
- 1 tsp mustard paste
- salt to taste
- 2 tbsp olive oil
- 1 fistful pecans or walnut halves

Instructions
- Wash and dry the arugula leaves.
- Mix the orange juice, lemon juice, mustard, salt and olive oil to make a dressing.
- Cut the apples into thin slices.
- Sprinkle the apples with a bit of lemon juice to keep them from darkening.
- Place the arugula and apple slices in a bowl.
- Pour the dressing over and toss to coat. Arrange in a salad platter.
- Sprinkle the pecans or walnut halves and serve.
