Avocado, Olive, Caper Salad
I have used regular green leaf lettuce which is easily available. Any greens will do. Select firm, perfectly ripe avocados which can be sliced and garnished with olives and capers. Pine nuts are optional. Both olives and capers are salty and very little salt in used in the dressing.
Ingredients
- 1 small bunch lettuce
- 2 large avocados
- 1 medium lime/lemon
- 1/2 tsp salt
- 1 tsp castor sugar
- 1 pinch white pepper powder
- 1 large firm tomato
- 1 tbsp pine nuts (optional)

Instructions
- Wash and dry the lettuce. Tear into bite size pieces. Arrange on your platter.
- Peel and stone the avocado and cut into long ½ inch thick slices.
- Extract the lemon juice and mix with salt, castor sugar and white pepper for the dressing.
- Arrange the sliced avocado over the lettuce and sprinkle with the lemon juice dressing.
- Sprinkle the olives and capers over the avocado and lettuce.
- Chop the tomato and place over the sliced avocado and lettuce.
- Toast the pine nuts briefly and sprinkle over the salad.
- If there is any dressing left, sprinkle over the entire salad and serve.
