Banana Cake

This is a beautiful textured cake and can be baked as a tea time treat without frosting. The only fat used is oil.  It is light and has a lot of flavor. This is a perfect recipe  to use up any fruit that is very ripe. The health benefits of bananas are numerous and one need not feel guilty in indulging in a slice or two of this delicious moist cake.

Instructions
  1. Sift flours, cinnamon powder, salt and baking soda.
  2. Place the castor sugar , eggs, essence and oil in a bowl.
  3. Beat for 2 minutes with an electric mixer until smooth.
  4. Fold in mashed bananas and sifted flour alternately. Once it is smooth, pour into a greased and floured cake tin or a loaf tin.
  5. Bake at medium heat for 45 minutes to 1 hour or until done.
