Banana Cake
This is a beautiful textured cake and can be baked as a tea time treat without frosting. The only fat used is oil. It is light and has a lot of flavor. This is a perfect recipe to use up any fruit that is very ripe. The health benefits of bananas are numerous and one need not feel guilty in indulging in a slice or two of this delicious moist cake.
Ingredients
- 2 1/2 cups flour (maida)
- 1/4 cup corn flour
- 1 tsp salt
- 1 1/2 tsp baking soda
- 1 tsp cinnamon powder
- 1 1/2 cups castor sugar
- 3/4 cup oil
- 3 eggs
- 2 tsp vanilla essence
- 1 1/2 cups (3 large) mashed bananas

Instructions
- Sift flours, cinnamon powder, salt and baking soda.
- Place the castor sugar , eggs, essence and oil in a bowl.
- Beat for 2 minutes with an electric mixer until smooth.
- Fold in mashed bananas and sifted flour alternately. Once it is smooth, pour into a greased and floured cake tin or a loaf tin.
- Bake at medium heat for 45 minutes to 1 hour or until done.
