Bell Pepper Salad
This is a very refreshing salad with char grilled peppers. The additional of a handful of cooked cold pasta makes it a complete meal. You can also use other garnishes like toasted pine nuts, crumbled feta cheese etc.
Ingredients
- 4 red bell peppers
- 100 g penne pasta
- 1/4 cup sliced, pitted olives
- 1 tbsp olive oil
- 1 tbsp wine vinegar
- 1 tsp salt
- 1 tsp castor sugar
- 1 tsp dried herbs
- 2 cloves garlic

Instructions
- Char grill the red bell peppers by roasting on the fire or cutting them into halves and roasting in a hot oven until the outer skin is charred and black.
- Place in a bowl and cover with plastic wrap until cool. Peel, de seed and wash. Slice into slivers.
- Crush the garlic. Mix with olive oil, wine vinegar, dried herbs and seasonings to make a dressing.
- Toss the sliced peppers in the dressing and chill for at least 4 hours.
- Cook the pasta in furiously boiling water and drain when done. Cool.
- Add to the marinated peppers and sprinkle with the olives.
- Chill in the fridge until served.
