Brownies
Brownies are chewy, cakelike goey chocolate walnut bars and can be made with or without frosting.They have been popular since the 1920s and can either be served as a teatime snack or as dessert with a dollop of ice cream. They can be cut into small 2” squares or larger pieces depending on your preference. The first brownie was probably a chocolate cake that failed to rise ! A high proportion of butter and sugar are used to get the dense, fudge, moist texture.
Ingredients
- 4 eggs
- 200 g butter
- 60 g cocoa powder
- 1 1/3 cup flour
- 2 cups castor sugar
- 1 tsp baking powder
- 2 tsp vanilla essence
- 1/2 cup walnuts broken into small pieces
Frosting (optional)
- 80 g butter
- 180 g icing sugar
- 25 g cocoa

Instructions
- Sift flour and baking powder.
- Heat butter and cocoa powder until melted.
- Cool slightly. Add sugar, flour, eggs, essence and half the walnuts and mix until combined.
- Pour into a shallow pan and sprinkle the remaining walnuts over if frosting is not required.
- Bake for about 20 minutes or until done. They should be slightly under baked.
- Mix ingredients for frosting. Heat until melted and pour over the baked brownies. Sprinkle with remaining walnuts.
- Cool slightly and cut into squares or rectangles.
