Brownies

Brownies are chewy, cakelike goey chocolate walnut bars and can be made with or without frosting.They have been popular since the 1920s and can either be served as a teatime snack or as dessert with a dollop of ice cream. They can be cut into small 2” squares or larger pieces depending on your preference. The first brownie was probably a chocolate cake that failed to rise ! A high proportion of butter and sugar are used to get the dense, fudge, moist texture.

Instructions
  1. Sift flour and baking powder.
  2. Heat butter and cocoa powder until melted.
  3. Cool slightly. Add sugar, flour, eggs, essence and half the walnuts and mix until combined.
  4. Pour into a shallow pan and sprinkle the remaining walnuts over if frosting is not required.
  5. Bake for about 20 minutes or until done. They should be slightly under baked.
  6. Mix ingredients for frosting. Heat until melted and pour over the baked brownies. Sprinkle with remaining walnuts.
  7. Cool slightly and cut into squares or rectangles.
