Green Masala Mutton Chops
This is a family favorite recipe which I got from my aunt Kalyanamma. The mutton chops are cooked twice, once with onion and regular spices and then with a paste of fresh green coriander (kothmir/cilantro), garlic and pepper. This is a spicy dish and both chilli and pepper can be reduced if required.
Ingredients
- 1 kg mutton chops
- 200 g onion
- 1 tsp garlic paste
- 1 tsp ginger paste
- 80 g peeled garlic
- 2 tbsp whole pepper
- large bunch fresh green coriander leaves
- 1 tsp chilli powder
- salt to taste
- 1 tsp ground coriander powder
- 1 tsp turmeric powder
- 4 cloves
- 1 inch cinnamon
- salt to taste
- 2 tbsp oil

Instructions
- Chop the onions and wash the coriander leaves well.
- Heat 1 Tablespoon oil. Add the cloves and cinnamon and wait for a moment until the aroma is released.
- Add the chopped onion and sauté for 2 minutes. Next , the garlic and ginger paste should be added. Sauté for another minute.
- The washed and drained mutton chops can be added and cooked without water in the onion , ginger garlic base for 3 minutes.
- Add 500ml water, chilli, powder, coriander powder, turmeric powder and salt. Cook until chops are tender. If there is too much water, reduce until the gravy is thick.
- Roughly chop the fresh coriander leaves and grind with pepper and garlic into a paste.
- Heat the remaining oil and add the ground coriander paste. Add the cooked mutton chops with the gravy and cook for just a minute or two before turning off the heat. The raw taste of garlic should disappear but the freshness of the coriander leaves should remain.
