Green Masala Mutton Chops

This is a family favorite recipe which I got from my aunt Kalyanamma. The mutton chops are cooked twice, once with onion and regular spices and then with a paste of fresh green coriander (kothmir/cilantro), garlic and pepper. This is a spicy dish and both chilli and pepper can be reduced if required.

Instructions
  1. Chop the onions and wash the coriander leaves well.
  2. Heat 1 Tablespoon oil. Add the cloves and cinnamon and wait for a moment until the aroma is released.
  3. Add the chopped onion and sauté for 2 minutes. Next , the garlic and ginger paste should be added. Sauté for another minute.
  4. The washed and drained mutton chops can be added and cooked without water in the onion , ginger garlic base for 3 minutes.
  5. Add 500ml water, chilli, powder, coriander powder, turmeric powder and salt. Cook until chops are tender. If there is too much water, reduce until the gravy is thick.
  6. Roughly chop the fresh coriander leaves and grind with pepper and garlic into a paste.
  7. Heat the remaining oil and add the ground coriander paste. Add the cooked mutton chops with the gravy and cook for just a minute or two before turning off the heat. The raw taste of garlic should disappear but the freshness of the coriander leaves should remain.
