Micro Greens Salad
Micro greens are the shoots of salad vegetables and spices such as radish, beetroot, fenugreek, mustard etc., picked just after the first leaves have developed. They are tiny, delicate greens that add color, texture and flavor to a variety of foods as a garnish and are big on nutrition and flavor. This is a refreshing salad made with iceberg lettuce, cucumber, apple and cherry tomatoes. The micro greens can be sprinkled on any colorful salad of your choice.
Ingredients
- 1 cup micro greens – fenugreek or mustard
- half a small head of ice burg lettuce
- 2 tender cucumbers
- 1 cup cherry tomatoes
- 1 large apple
- 1 small lemon
- 1 tbsp olive oil
- 1 tsp castor sugar
- 1 tsp salt
- a pinch of mustard

Instructions
- Wash and dry the iceberg lettuce. Tear into small pieces and place in a bowl.
- Cut the cucumber into half lengthwise and then into half circles. Slice the cherry tomatoes into two halves.
- Peel and chop the apple into 1 inch cubes.
- Wash and dry the micro greens.
- Extract 1 tablespoon of lemon juice.
- Place the oil, lemon juice, sugar, salt, mustard in a bowl and combine well to make a dressing.
- Place all the prepared vegetables and fruit in the bowl with the lettuce and toss with the dressing.
- Sprinkle the micro greens over the salad and chill for an hour or until required.
