Mtabbal
Lebanon, Syria, Iraq and Iran have a French and Arab influence which is reflected in their meze or appetizers. These are served in small portions at the beginning of the meal. Pita bread or any other flatbread is ideal for serving with the mtabbal.
Ingredients
- 2 large oval black aubergines or eggplants
- 1 bulb garlic
- 1 tsp salt
- 1 large lemon
- 60 ml sesame or any vegetable oil
- 1 tbsp olive oil
- 1/4 cup pomegranate seeds
- small bunch parsley
- 1 tsp chilli flakes (optional)

Instructions
- Char grill the aubergines either in the oven or on top of the stove until soft. Peel and mash.
- Peel and mash the garlic with a little salt.
- Extract 60 ml juice from the lemon.
- Put aubergine, garlic, sesame/vegetable oil, lemon juice and salt to taste in a food processor and pulse until smooth.
- Pour into a shallow serving bowl. Sprinkle a tablespoon of olive oil on top.
- Garnish with pomegranate seeds, chopped parsley and chilli flakes (optional).
