Orange & Baby Spinach Salad
This is a colorful salad made with baby spinach and oranges. Sliced cucumbers and red peppers make it crunchy and refreshing.
Ingredients
- 2 large ripe oranges
- 1 bunch baby spinach
- 1/2 small red bell pepper
- 1 small cucumber
- 2 tbsp icing sugar
- 2 tbsp olive oil
- 2 tbsp vinegar or lemon juice
- pinch white pepper powder
- salt to taste

Instructions
- Soak and wash the spinach thoroughly. Dry the spinach leaves.
- Mix together vinegar or lemon juice, salt, olive oil, pepper and sugar.
- Peel the oranges and slice each section into a butterfly. Open into a round shape and remove seeds.
- Cut the cucumber lengthwise and into semi circles. Cut the red bell peppers into slivers.
- Put some of the washed baby spinach, chopped cucumber and bell peppers at the base of the serving plate. Sprinkle a little of the dressing over it.
- Arrange the cut Orange slices on the edge in a circle.
- Sprinkle the remaining baby spinach, chopped cucumber and bell peppers in the center and sprinkle the rest of the dressing over it.
