Pomegranate, Pista & Pear Salad
This is a salad made from ingredients which are predominantly Mediterranean. Ruby red , delicious pomegranates are powerful antioxideants and loaded with nutrients. Pistachios or Pistas originating from Central Asia and Middle East, also come from the Mediterranean and are loaded with nutrients. They control cholesterol levels and are a crunchy colorful addition for salads. Thinly sliced pears used in this recipe boost the immune system. Served on Lollo Rossa lettuce or any other lettuce of your choice this salad makes a refreshing and healthy addition to any meal.
Ingredients
- small bunch lollo rossa lettuce
- 1 large ripe pear
- 1/2 cup pomegranate seeds
- 1/2 cup shelled green pistachios
- 2 tbsp wine vinegar
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp castor sugar
- 1 tsp lemon juice
- 1 tsp mustard

Instructions
- Wash and dry the lettuce. Tear into small bite size pieces.
- Slice the pear with the skin. Drizzle the lemon juice and castor sugar and set aside. The lemon juice prevents the sliced pear from browning.
- Prepare the dressing of wine vinegar, olive oil, salt and mustard.
- Place the lettuce, half the sliced pear, half the pomegranate, half the pistachios in a bowl.
- Pour the dressing over and toss. Chill for 15 minutes.
- Sprinkle the remaining pear, pomegranate and pistachios over the salad and serve chilled.
